I LOVE mini cupcakes. Like seriously.... they are perfectly bite sized and oh so cute. I mean, who doesn't love a miniature version of pretty much anything right???? So I am practicing my baking skills. Yup! That's right. And I'm starting out with cupcakes. I haven't really been able to practice much what with going to work full time and school part time at night (bleck) but I try to get some baking in when I can. Over the weekend I made the most DELICIOUS cupcakes courtesy of a recipe my mom gave me when I got married. I made mini raspberry cupcakes with raspberry cream cheese frosting. Yeah I know..... they were incredible!!! Mistake of the century though is that I did not put cupcake liners in my pan. They didn't stick or anything because I greased the pan but those little cupcakes were just too easy to pop in my mouth everytime I walked through the kitchen. Next time, I'm definitely using cupcake liners so that it takes some effort to eat those things. Wise idea.
^^ This comparison picture? I was having a rough time keeping all my batter contained in the individual cups.... obviously. Found this unused mustard bottle to put the batter in and it truly saved the day!!
