Mini German...


...Pancakes that is.

OOOOO they were scrumptious!


Aren't they just so cute?  Yes.  Yes they are.  and Yes.... I will give you the recipe.

Mini German Pancakes

Ingredients:
6 eggs
1 cup milk
1 cup flour 
1/4 tsp salt
1/2 tsp vanilla

Directions:
Preheat oven to 425 degrees.  Spray regular size cupcake tin with non-stick cooking spray.  Mix eggs, milk, flour, salt, and vanilla with wire whisk until blended. Batter will be lumpy. Pour batter into tin until each individual tin is 3/4 full.  Bake 18 to 25 minutes.  Makes 12 pancakes.

Justin absolutely LOVES german pancakes.  We haven't decided which ones we like better.  The individual or the ones in the 13x9 inch dish.  They are both so good!  Enjoy!

Missing this boy

I've been reading others blogs about how they miss their husbands so much since school has started back up again.  I would read them and feel so bad because I would not like to be away from Justin!  He is in school and the first little bit wasn't bad at all.  Now that the back to school fun is over with and it is getting down to the nitty-gritty..... I'm starting to understand what those other girls were talking about.  I don't like it. Not one bit.  However, I do understand that this is what needs to be done to ensure our good life in the future.  I'm not blind to that fact.  The process just sucks.  REALLY sucks. I can make it through for another 2 years or so.  To all those girls who have husbands in school..... let's start a club.  Then we can BOO-HOO all we want to and take pity on each other.  OH!  and eat cookies.

Weekend as Loganites


Oh the weekend was a good one.  Justin and I always love visiting Logan.... There is just something about it.  We went up there to visit Jessie & Gordo, Justin's sister and brother in law and had a great time with lots of fun activities. Could not get enough of the rock climbing and demolition derby's.... that is for sure!

I would put pictures up of me rock climbing but as strange as this may seem, I am not particularly fond of posting my behind on the internet.

Justin's however, I have absolutely no problem with :)


This boy is seriously good at everything he tries.  Talk about intimidating...... This dumb rock sure got the best of me and I failed to complete the climb.  Justin, of course shimmied on up there like it was a walk in the park. Jeez....

Demo derby's have always been fun for Justin and I.  Last one we went to in Logan Justin had strep throat.  I am pretty sure he enjoyed it much more this time!


The sky was beautiful that night too.


 This picture doesn't show the excitement of the derby like I thought it would when I took it.  Luckily this little cutie with her irresistible cheeks was kind enough to glance my way and make the picture worth keeping!  I can't get enough of that face....


Scott was our starburst trashcan.  No. We never told him.

We took the bike up there as well.  I wasn't as hard of a drive as St. George was.  But that one was 5 hours compared to Logan's 2 hour drive.  

Our hair always looks and feels super great after being on the motorcycle.  By that I mean it is absolutely the worst ever.  Need an example?


uh... yeah....  

I was dumb and didn't braid my hair before the trip.  Such tangles!!!!  But let me tell you a story about said tangles.

Once upon a time there was a girl.  She got home from a fabulous trip with her husband on the motorcycle and took a shower.  She put in lots of shampoo for the dirty hair and lots of conditioner for the tangles.  She got out of the shower and started to brush her hair when in dismay she realized the brush was unable to complete the task.  THE TANGLES WERE STILL THERE!  She put in more conditioner and let it sit for 15 minutes.  She rinsed and there was still no change.  She put in a conditioning hair treatment.... no change.  She put in conditioner, another hair treatment, and olive oil and tried to brush her hair with all that product still in..... no such luck.  This made the girl pathetically start to tear up next to the bathtub.  Her husband walks in and asks her what's wrong.  She tells him the sordid story and he feels so bad.  He pulls her to her feet and tells her to turn on the TV to watch a show while he brushes my hair out.  YOU HAVE GOT TO BE KIDDING ME. How lucky is this girl to have the sweetest husband in the world!?!  It took 2 WHOLE HOURS to get all the tangles out.  The product was still in her hair too!  He was so patient and delicate with the task it was all she could do to keep from tearing up.

Good story huh!  and no..... I will not share the hubby. :)

Ooooo my head is still so sensitive.  So grateful for him :)

Anyways, we headed back on Sunday and stopped at my parents house for dinner.  Always so delicious! Plus I made my favorite and oh so delicious Pumpkin chocolate chip cookies.  YUM.

My sister Kalinja is about ready to get her license but she had never been on state street or the freeway.  Justin and I took her out and she did absolutely fantastic!  I was seriously so amazed!  Utah will no longer be rated 4th highest in the country for bad driving with this one on the road!


So proud of her.

We must have been so tired when we got to my parents... we were a little out of hand with dish duty.


Our true colors have finally revealed themselves.....

Still recuperating from our eventful weekend but we still had such a great time!  What did you do for yours?

Just for me!


I got a Nook!  WOOHOO!  Thanks Justin!  He's the sweetest!  I have had it since Monday and have already read 3 books.  It's fabulous!  I wondered how much I would like it since I love having a book in my hand and turning it's tangible pages.  Well I will certainly still do that.  It's definitely not a replacement.  Just another method of doing what I love!  I have talked about how much I love books here and here and it's as true now as it was then.  I'm going to be reading all weekend!  So excited.... 


Yes I did have as much fun popping the bubble wrap and I did exploring my new Nook.  Well almost :)

Pumpkin Season


Oh it sure is my favorite time of the year.  Summertime is a very close second.  It lost first place standing because there are no pumpkins!  So I don't really care for pumpkins.... just the sweet treats it produces!  Lately I have been dying to find a pumpkin cookie recipe that I like.  I'm not way into the cake-like cookies you normally find.  I wanted something dense.

GUESS WHAT!!! I FOUND IT!!!!!

Ah!  I'm just so oober glad I have it!  Of course I tried it out as soon as I got home and what a delicacy it was!  Did I mention the dollop of cream cheese frosting on top???  I DIDN'T???  How rude of me. :)


I am a pretty messy baker....  I just figure it doesn't matter as long as the end product turns out superb. :)  Justin usually does my after-baking dishes.  I tend to take naps right after.  tee hee.


SCRUMPTIOUS! This is now my all-time favorite dessert.  Gonna make me some more!

I'm starting to salivate so I need to switch subjects.  If you don't mind, of course.

BYU! BYU! BYU!

So I am not a student at BYU but my parents are both alumni and absolutely love the school.  I will admit that there is something so amazing about that university!  My dad bought season football tickets and we went to the BYU vs. WEBER home game.  First ever university football game and I loved it!!!  It's not necessarily the sport that I love so much as the sheer excitement of it all.  So many fans dressed up to support!  It was super fun!  Loved our little daddy-daughter date. :) Oh!  If you were wondering, we won 45 to 13. OH YEAH.....


SMALL SIDE NOTE:

I've lost 14 lbs.!!!!  I cannot even believe it!  I really never thought  it would happen.... success stories only happen to people who own Photoshop!  Not to me!

But I did it!  WOOHOO!  Still more to go but I'm ecstatic about the progress I have made :)

On this day


I vaguely remember this day 11 years ago.  I was in junior high and barely understood what was going on.  I remember I had a fundraiser I was doing for choir and I was going door to door trying to sell.... something.  I remember seeing it on tv at school and at my home.  I remember my mom not being able to tear her eyes away and how she had her hand over her mouth.  I didn't understand it but that day has stayed with me.  As I have gotten older, I learn more and more about this day and my prayers go out to the people who were affected and to the families who lost a loved one.  I cannot even begin to comprehend what that must have been like.  My heart aches for them.  I believe though that families are forever and they will be reunited again.

Weekend Notes


I really meant to post this Saturday.

I'm going to put up my favorite notes from my new little book every weekend for us to enjoy!  That way it keeps me going with the book and then I will get to share with all of you!

Yes.  Justin Woods wrote the last one!  The same Justin Woods that is my husband.  Isn't he fabulous. (To clarify: I wrote it.  He just said it. He wasn't trying to come up with one for my book... it was just from one of our convo's and I just loved how he said it.  Brilliant man.)

We had such a busy weekend.  I will tell all about it soon!
